- The first step is to clean and dry your molds before using. Then, using a double boiler, temper the chopped chocolates. Afterwards, fill the mold cavities with the chocolate and also coat the sides and the bottom of the cavities with a fine chocolate layer by inverting and swirling the mold. Now you can place the mold in the refrigerator to allow for the chocolate to set.
- Then, place the caramels, cream, and a tablespoon of water in a bowl that is safe for microwaving. Microwave first for one minute, then check for consistency. If the caramel is not yet liquid and smooth, microwave it again. Do this until such a time that the caramel has already melted completely. Slightly cool the caramel and see to it that it is lukewarm yet easy to mix.
- Take out the set chocolate mold from the fridge, and then fill the cavities (about two-thirds full) with caramel. Cover the caramel by sprinkling and pressing the chopped nuts over it. Do not let the nut layer reach up to the topmost part of the mold cavities.
- You can now cover the candy bar tops with the excess chocolate. Note: The chocolate may be re-warmed. Then, using a knife or metal spatula, scrape the excess chocolate from the cavities. Lastly, place the mold back in the refrigerator to completely set the chocolate caramel candy bar.
